أَوْسَطُ — middle. A superlative/elative adjective ('most middling') heading an 'of' pairing with the next word ('the middlemost OF Quraysh'). This single elative shape carries the whole 'most...' idea, and as the head of the pairing it is made definite by the group that follows.
