فما كان السلف يحطون على سالكه ويبدعونه،
So the pious predecessors did not criticize the one who followed it and accuse him of innovation.
سَالِكِهِ — its follower. This noun, its follower, is in the genitive governed by the preposition, with the possessor attached pointing back to the path mentioned earlier. The suffix tracks the way being followed, so it reads 'the one who follows it'.

The purpose of mentioning them is to explain their states and morals, so that the seeker may emulate them.
السَّالِكُ — the seeker. A definite noun, 'the seeker', the subject of 'may emulate', arriving after its verb as Arabic allows. Its 'the' makes it the seeker in general, the one for whom the examples are set out.
