The purpose of mentioning them is to explain their states and morals, so that the seeker may emulate them.
وَأَخْلَاقِهِمْ — and morals. The connector 'and' joined to a noun 'their morals', with 'their' attached, paralleling 'their states'. It adds a second thing to be explained, sharing the same possessive frame.
