فَأَتَاهُمْ مَلَكٌ فِي صُورَةِ آدَمِيٍّ
Then an angel came to them in the form of a human.
صورَةِ — form of. This noun is the first half of an 'of' pairing ('form of...') and also the object of the preceding preposition. As the leading term of such a pair it gives up its own 'the' and draws its definiteness from the word that follows, which is how Arabic links two nouns into a single 'the form of X' unit without a separate 'of'.
