الْجَنَّاتِ — the gardens. This is 'the gardens', a definite plural with 'al-', the owned second term after 'dwelling in', so it takes the genitive ending. The pairing builds 'the dwelling of the gardens', that is, dwelling in them. The plural is built into the word's shape.
