الرِّجَالِ — the men. This definite noun is the owning half of the pair, naming the men meant, and would sit in the 'of' (genitive) form as the construct's second member. Its 'the' makes the whole phrase definite. It anchors the description of the company he kept.

Only men like salt.
الرِّجَالِ — of the men. The al- makes this plural definite, 'the' men, and it closes the 'males of...' pairing as its owner. Sitting in the owned-by slot, it carries the genitive 'of' ending, locking the two words into 'the males of the men'.
