Cold foods should be eaten in the summer, and hot foods in the winter; introducing food upon another food is bad.
الْحَارُّ — the hot. The al- makes this definite, 'the hot'. It is an adjective describing the food meant for winter, agreeing with that noun in definiteness, and carries the -u subject ending tracking the eaten thing.

And its hotness should be balanced with its coldness.
حَارُّهُ — its hotness. This noun, 'its hotness', carries the attached -hu 'its' at its end, so possessor and possessed ride in one word. The -hu points back to the food, and as the thing being balanced it is the grammatical subject of the passive verb above it.
