وهكذا الصائم صومُه مستورٌ عن مشاهدةِ الخلق، لا تدركه حواسُّهم
and so is the fasting person; their fast is hidden from the view of creation, it cannot be perceived by their senses.
صَوْمُهُ — his fast. 'Fast' with '-hu' (his) attached, nominative — the start of a comment-clause about the topic 'the faster'. Arabic states a topic, then a fuller clause about it: the faster — his fast is hidden.

If he speaks, he does not speak with what harms his fast,
صَوْمَهُ — his fast. 'Fast' with '-hu' (his) attached, direct object of 'wounds', accusative ('-a'). The fast is what such speech would injure.
