وبيان ذلك أن الله قد خلق للآدمي آلة يدافع بها عن نفسه الضرر وآلة يجتلب بها النفع،
And the explanation for this is that Allah has created for humans tools to defend themselves from harm and tools to bring about benefit,
وَبَيَانُ — and the explanation for. The opening particle joins this on, and the noun is the topic, 'the explanation', in the subject form as what the sentence is about. It heads an 'of' pairing leading to what is being explained.

And he describes it in a splendid account in his famous journey,
بَيَانٍ — an account. An indefinite noun governed by the preceding 'in', so it carries the genitive with the indefinite two-stroke ending (heard as final -in). It names the account, and being indefinite it presents it as 'an account', one not previously specified, to be qualified next.
