الجَوَارِحَ — the senses. 'al-' = 'the'; 'jawarih' = 'the limbs, sense-organs' (plural). The '-a' ending is the object form after 'inna'.

The fasting person is the one whose limbs abstain from sins,
جَوَارِحُهُ — his limbs. A broken plural 'limbs / body-parts' with '-hu' (his) attached, nominative as the subject of 'abstained', after its verb. The real faster is one whose very limbs fast from sin.
