وَالْإِنْسُ — and humans. An 'and' plus 'the' on 'humankind', the next item in the list of included beings, in the subject form to match the others.

وَالْإِنْسَ — and mankind. The 'and' prefix joins this onto the previous object, and a coordinated noun keeps the same case, here the object's accusative ending. It adds mankind alongside the jinn as the second thing created.
